This week I wanted to share a seriously special wine from the Barossa Valley which is perfect for a special occasion. I’ve surprisingly been enjoying Cabernet Sauvignon more lately (I wasn’t really the biggest fan before). But this one was one of those wines that I really had to pinch myself that I was lucky enough to try out.
I really enjoyed the Shiraz from Cimicky Wines that I sampled a few weeks ago, and this Cabernet Sauvignon really drilled home to me how special Cimicky Wines are. Although this wine carries a slightly higher price tag, with Christmas coming up it would make for the perfect gift for that special someone.
About Cimicky Wines
Cimicky, located in the Barossa Valley was one of the first wineries in Australia. The property was originally settled all the way back in 1942! Karl Cimicky purchased the property in 1970. When Karl retired in the ’80s, his son Charles Cimicky and partner Jennie took over the business. Since then, Cimicky has been producing incredible wines and won Five Star Winery in James Halliday Wine Companion Australia 2021.
The Blackmoor range celebrates the long and rich history of viticulture in the Barossa Valley. It pays tribute to Captain Leslie Ward, a WW1 Military Cross recipient and one of the first owners of the land. He had a passion for racehorses and in 1931 owned Blackmoor who went on to win the most prestigious horse race in Adelaide. He was coming last and ended up winning on the line beating the favourite for the race. I love the story behind this range!
What I loved about the Cimicky Blackmoor Cabernet Sauvignon 2017
The Cimicky Blackmoor Cabernet Sauvignon 2017 is a seriously special wine. For starters, the bottle has a lot of weight to it which immediately makes it feel more special, along with the wax seal and corked bottle. But it’s inside that really counts!
On the nose, there are notes of blueberry, plum and a hint of cherry, balanced by cocoa and vanilla from the integrated oak. The palate is full-bodied and packed with balanced complexity. Those flavours come through again with an explosion of fruit balanced by smooth cocoa and vanilla. The tannins are well integrated and velvety smooth, making this wine oh so plush to enjoy. Its long finish is luscious and truly an experience.
What I really love about the Cimicky Blackmoor Cabernet Sauvignon 2017 is that it already has a few years on it. It’s showing a beautiful profile due to the maturation in the wine, making it perfect for enjoying now. This makes it a great wine for special occasions or as a great gift.
What to enjoy it with
The Cimicky Blackmoor Cabernet Sauvignon 2017 is a full-bodied wine that goes perfectly with a special meal. Those balanced flavours are perfect for enjoying heavier food and will pair beautifully with a special occasion. Or, you could open it up with your weeknight steak! Who am I to judge? The great thing about this wine is that it makes the occasion!
This wine will go with plenty of foods but the best pairing would be slow-braised meats. Braised beef or roast lamb would make for a perfect pairing with this beautiful wine.
