I love all bubbles but I certainly loved this Idyll Geelong Blanc de Blanc even more! Blanc de Blancs is made using purely the Chardonnay grape – but if you hate Chardonnay don’t worry! It certainly doesn’t taste like a Chardonnay (although that wouldn’t be a bad thing because the Idyll Chardonnay I tried a few weeks ago was great).
This wine was made using the traditional method which means it uses the same winemaking techniques as Champagne. The wine undergoes second fermentation in the bottle and once ready, the yeast is removed before bottling. This adds some additional complexity of flavour to wines, and with this one which has aged for 12 months, it gave a delicious nuttiness.
The Idyll Geelong Blanc de Blanc is their first estate-grown sparkling wine and is made in a cremant style meaning fewer bubbles and a softer palate. I found this wine to be smooth and creamy yet fruity and lively all at once. Fresh citrus and lychee combined with the nuttiness from aging create a taste sensation! I loved the complexity in this wine and how each sip offered something different to unpack.
This wine is crying out to be paired with seafood – think oysters or sashimi! But you could also enjoy it on its own before dinner.
