The Clover Hill Tasmanian Cuvée Rosé is a beautifully balanced sparkling wine with notes of strawberry, cherry and brioche. The blend of Chardonnay, Pinot Meunier and Pinot Noir makes for a delightfully fresh and vibrant wine that has all the hallmarks of a Champagne without the price tag.
I am a massive fan of Clover Hill wines, and even more so after trying this beautiful Clover Hill Tasmanian Cuvée Rosé. On our recent trip to Tasmania, we visited Clover Hill and got to try the Sparkling Wine Blending experience where we actually got to try and replicate this very wine!
I soon realised that we need to leave it to the professionals because you cannot recreate perfection. That, and my partner is not as good at maths as he thinks he his which resulted in Sparkling lolly water!
The wine was so good that I had to try it again at home and wanted to share my review with you all! We could all use more bubbles in our lives, and this non-vintage sparkler is perfect for enjoying with friends or for celebrating. I opened this as part of the Sparkling Wine night I hosted a few weekends ago. I have to tell you this was definitely one of the crowd favourites!
About Clover Hill
Clover Hills Wines was established in a former dairy farm in north-east Tasmania in 1986. The Goelet family were trying to find a place where they could produce world-class sparkling wine to rival the Champagne region. The site they chose was the perfect location for producing Méthode Traditionnelle sparkling wine.
Since their first vintage in 1991, Clover Hill has gained a great reputation for quality, elegance, finesse and the distinguished Tasmanian style of their wines. Their attention to detail and care in producing wines has meant their Sparkling Wines are some of the most awarded and well regarded, with numerous awards to approve is including being inducted into the Australian Sparkling Hall of Honour.
What I loved about the Clover Hill Tasmanian Cuvée Rosé
The Clover Hill Tasmanian Cuvée Rosé is a beautiful sparkling that delivers all the flavours you want and more! It is made using the traditional Champagne grapes with the addition of some Pinot Noir dosage for additional flavours and the slight pink hue. This sparkling wine is soft and creamy with a beautiful structure.
I loved that this wine delivered some really nice fruity characteristics, but what really made it stand out to me was the brioche and toastiness in the palate. It was creamy and rich whilst still being fresh and vibrant. Flavours of strawberry and cherry went so well with the brioche notes from the use of the traditional method to create this wine.
This Sparkling Wine drinks beautifully and is great value at $36 a bottle. It drinks like a great Champagne but doesn’t carry the price tag. I love that it is multi-layered – being light and fresh but also rich and creamy all at once. It’s the kind of wine that is perfect for celebrating with, but also would be great to enjoy with friends. You could also pop it down for a couple of years to see how it develops over time!
What to enjoy it with
The Clover Hill Tasmanian Cuvée Rosé is the kind of wine you don’t need food to enjoy it with. It delivers so much in flavour that I think it’s the perfect wine for enjoying before dinner. There is a beautiful structure to the wine and complexity that you can unpack with every sip with or without food.
However, if you were looking for a pairing for food, a cheese platter would be perfect. Soft cheeses and cured meats would be a perfect match for this wine. Or you could even pair it with some smoked salmon for something different!

The Clover Hill Tasmanian Cuvée Rosé is a beautiful wine that keeps you going back sip after sip. It is fresh and vibrant while also smooth and creamy. Strawberry and brioche marry together for a wine that keeps you sipping. With or without food, this wine truly shows why Tasmanian sparkling is making a name for itself as a true rival of Champagne. And without the price tag too!

I only recently learnt that sparkling wines were even made in Tasmania, I was somewhat in shock when the Sommelier recommended Arras as the best affordable Australian sparking wine. I love Rosé so this Clover Hill sounds like an excellent number to check out. Thank you!
